Graines De Couscous

It is at Sicaveneria (Le Kef of the Roman era), between the plains of Medjerda and the Table of Jugurtha, that the couscous ETIK-T-FOOD is prepared, based on a mixture of seeds of durum wheat Chili And Beskri, original varieties of the Tunisian Northwest.

Prepared according to traditional methods, the seeds of couscous, of a rare finesse, gorge themselves of the sun to dry. Steamed, they remain light and aerial.

Produced by Bio El Kef, the ETIK-T-FOOD couscous benefits from the guarantee of authenticity of this association on the products of its soil and its commitment in the preservation of varieties and local seeds. A citizens’ association, which also contributes to the empowerment of farmers in isolated areas.

Ethical in its approach, Bio El Kef supports and disseminates ecological farming practices in the different regions of the Tunisian Northwest.

Harissa

In the Mediterranean, in the city of Neapolis (Nabeul of the Greco-Roman era), harissa ETIK-T-FOOD is prepared from Maâmouri peppers, a fixed and typical variety of the region. Fruit of a craft production, this harissa, sublimated, evolves towards other universes, those of aromatic plants and condiments with flavors perfumed.

Honey

The ETIK-T-FOOD honey in Vaga (Beja of the Roman era), in the Kroumirie mountains and on the Medjerda plains, draws its strength and specificity, the exclusive fruit of the floral heritage of the region : Thyme, rosemary, eucalyptus, heather, myrtle, …

The production of this unique honey is the result of a Northwestern youth initiative, as part of an international employment support program.

 

Young people dedicated to the valorisation of the secular traditions of Tunisian beekeeping and to the protection of the biodiversity of their region.

Sirop de caroube

Le sirop de caroube, comme les autres sirops de fruits, se mange à sec une cuillère à café chaque matinée.

Se mange avec du pain au petit déjeuner ou est utilisé comme condiment dans les plats cuisinés Il peut être utilisé comme un agent de saveur dans les cakes, pains, bonbons, crèmes glacées…

Communicate with the creators of ETIK-T-Food

Hela Cherif

Expert in Branding and Regional Development. As part of several missions carried out by international NGOs, a regional development and capacity building work has led to projects in the North-Western part of the country for the valorization of agricultural value chains.

Amel Djait

A journalist and communication expert, Amel worked on the project “Promotion of Rural Women’s Clusters for Food Security and Income Generation (PRW)” for the production of a book on Tunisian terroir cuisine.

M.Moez BenDhiaf

Based in the Kef region, is an agronomic expert specialized in olive cultivation techniques and president of the “BIO ELKEF” Association. Through his rich agricultural experience and member of the International Association “SLOWFOOD”; he has allowed several farmers in the region to continue their agricultural activities and preserve the techniques of ancestral plantations for the safeguarding of the genetic heritage of several seeds of rare wheat.

Wassim Ben Yahia

Manager of an international trading company (Blubex Trading), member of Tunisian American American Young Professionals (TAYP) and Logistic Manager of the Tunisian Arts and Crafts Promotion Project in the USA.
